I wonder if I am the only person who wishes their garden produced more zucchini? In the past I have planted two plants each of yellow squash, patty pan, and zucchini, and that has been about right for the family.
We put it on the grill.
We put it on pizza.
We add it to muffins, all the regular stuff. But this year I have discovered zoodles, zucchini that is cut to resemble spaghetti. All it takes is a quick sauté with a little butter and garlic to make a delicious side dish or foundation for a pasta sauce. The secret is in using the right tool. I have had julienne peelers in the past and they were a disappointment, but the Kuhn Rikon Julienne Peeler is a thing of wonder.
A few zucchini become a big bowl of zoodles in just a few minutes. I am in love and next year will need to plant many more zucchini.
