Last week I picked up a book from the library titled, Babcakes Covers the Classics. Apparently Babycakes is a gluten free, vegan bakery with stores in Los Angeles and New York. Because I do not live in Los Angeles or New York, I had never heard of them, but the book intrigued me.
I have checked out many gluten free baking books, and even tried a few recipes, but the truth is that gluten free baking is hard. I am a baker, I used to make bread almost everyday as well as muffins and scones and pies and elaborate birthday cakes. After trying and failing a couple of gluten free recipes, I did not have the where with all to learn how to bake all over again. It was just too hard. Dozens of different flours and gums and meals and starches, many of which are called for in a single recipe because each one of them acts and tastes differently, not a single one of them resemblinging good ole wheat.
Then I flipped through this book. First off, the author starts many recipes with a GF flour mix. One that is easy to find and manufactured by a company I know and love, Bob's Red Mill. Being able to make something without having 3 different kinds of rice flours on hand is a huge plus. The variety of recipes is nice and the instructions do not take two pages. OK, I am willing to give it a try.
First up
Oatmeal Cookies. I followed the directions and ingredients precisely, using the approved substitutions of canola oil instead of coconut oil, and cherries instead of raisins.
So good! The plate was emptied in a matter of hours. No, I did not eat them all myself, we had lots of people in the house.
Add a bowl of strawberries and they are a great little snack. The only thing I will do differently next time is to flatten the cookies before I put them in the oven. I like a flat cookie will a little crisp to it.
Next up will be Krispy Rice Blocks.
Yay for food that you can eat and is easy to bake! Those cookies look delicious.
Now if only I could think of a substitute for asparagus....

I have thought about trying some gluten free foods. I can't wait to hear what you think about the rest of the recipes in the book.
