Last night I read this blog post and became very excited. Really? A cup for cup gluten-free flour? I sat at my little perch and thought about all the possibilities. Grandma's chocolate cookies, gravy, bread...As soon as I was done reading I clicked over to learn about the details.
First, there is the ingredient list. Bad. Most Celiacs also have dairy issues, to put milk powder in the flour is a bad move. I would not buy it for that alone. Then I clicked over to see the price and almost fell off my chair. At $20 for three pounds it is double any other gluten and dairy free flour out there. Even if I were able to eat dairy I would not buy this flour. $20 for three pounds?!?! We are Celiacs, not idiots.
I'm with you - on the surface it sounds much easier than buying multiple alternative flours and using them in varying ratios. But dairy? Big mistake. Second to that corn. Between dairy and corn I'd say they've ruled out a whole bunch of the market right there.

Puh-lese, $20 a pound? Better to invest in your own flour mill so you can grind your flours to the fineness or coarseness needed.
