I have been intrigued by the book Primal Cravings by Brandon and Meagan Keatly. It is full of good recipes for someone like me, who is not eating the Paleo diet because of strong beliefs, but because of my food intolerances. But I suspect the Paleo community will call out the recipes for having too much meat, too much fat, and lots of root starches. For instance, the biscuit recipe I made contains 1/2 cup of butter. That means each "biscuit" contains a whooping tablespoon of butter. Nothing healthy going on here.
This was my first use of coconut flour and I will try it again. When baking, you can really smell the coconut. The first bite, you can taste the coconut, but it disappears quickly. Dip that biscuit in a pot of Sloppy Joe sauce and there is no coconut flavor anywhere.
The biscuits look more like cookies than traditional biscuits, and they do not have the tender flakiness of a traditional biscuit, but as someone who has not been able to put any type of baked good in my mouth for almost three months, they will do just fine.
I do not see this as a cookbook that would be used everyday, but on those days when you need a treat, this is a good place to start.
ETA: Right out of the oven the "biscuits" were fine, but two hours later they were hard as rocks and managed to be both crumbly and oily at the same time. I will not be making them again.
