The Elimination/Challenge Diet had been going along at a nice clip. There were some foods that caused a problem and I put them at the end of the list to retry, nothing awful. Then I had a HUGE setback. Not sure what I ate, I was a little too cavalier and consumed two new foods back to back. The result left me in a lot of pain for days and now I am resetting. After 24 hours without pain I will begin reintroducing foods that I have not yet tried, or that caused a mild reaction. I am not going to worry about the foods that went down just fine. It will be easier this time around.
So, one of the known problem foods is eggs. I seem to be able to eat small amounts, but eating two at one sitting is bad. I tried both yolks and white separately and even tried duck eggs, but no matter what, eating more than one egg at a time is a problem. Muffin tin frittatas are in, omelets are out.
Because of the small amount of egg per serving in baked goods, I am sure they would be fine, but in order to minimize any possible reactions, I began looking at how to replace eggs and came across some very useful information.
When a recipe calls for eggs to be used as a binder, you can substitute the following for each egg:
1/2 medium banana, mashed
1/4 cup applesauce or other puréed fruit
1 tablespoon ground flax mixed with 3 tablespoons warm water. Let it sit for a few minutes to thicken up.
When a recipe calls for egg to be used as a leavener:
1 1/2 tablespoons of oil mixed with 1 1/2 tablespoons water and 1 teaspoon baking powder.
I have used the applesauce and flax seed methods with really good results and I am looking forward to trying the others. Do you have any egg replacement tips?
I think I have heard the flax one before....

Chia seeds in place of the flax, probably works about the same as the flax which is to say it will work in some things and not in others. I used to use this one for pancakes and I happen to know it won't work for brownies.
I will have to try the leavener substitute, hadn't heard of that one.
